POLJŠAKICA

POLJŠAKICA: A local, indigenous variety of the Vipava Valley. Only a few hectares of this rare variety remain, producing fresh and elegant white wines with a distinctive terroir character.

VINIFICATION: The grapes were hand-harvested into small 20 kg boxes and cooled overnight. Gentle pressing took place in a closed environment without the presence of oxygen. Fermentation was temperature-controlled and carried out in stainless steel tanks. The wine aged on fine lees using the “sur lie” method until bottling in July 2023.

TASTE: Fruity, tropical aroma, white flowers, stone fruit, and honeyed notes. On the palate, the wine is medium-bodied, with pleasant fruitiness and minerality. The aftertaste is slightly creamy and saline.
